  • 1 whole chicken, cut into pieces
  • 3 stalks lemongrass, bruised
  • 6 kaffir lime leaves
  • 2 bay leaves
  • 5 cloves garlic
  • 5 shallots
  • 2 tsp coriander seeds
  • 1 tsp cumin seeds
  • 1 tsp salt
  • 1/2 tsp white pepper
  • 2 inch ginger, sliced
  • 1.5 L water
  • 200 g rice vermicelli
  • 50 g bean sprouts, blanched
  • 2 tbsp fried shallots
  • 2 tbsp chopped celery leaves
  • 2 tbsp chopped scallions
  • Lime wedges for serving

Instructions:

  1. Grind garlic, shallots, coriander seeds, and cumin seeds into a smooth paste.
  2. In a pot, mix the chicken pieces, lemongrass, kaffir lime leaves, bay leaves, ground paste, ginger, salt, white pepper, and water.
  3. Cook over medium heat until the chicken is tender and the broth is fragrant, about 1 hour.
  4. Remove the chicken from the pot and strain the broth.
  5. Cook the rice vermicelli according to the package instructions.
  6. Divide the cooked vermicelli among 4 bowls.
  7. Top each bowl with chicken pieces and blanched bean sprouts.
  8. Pour the hot broth over the bowls, then garnish with fried shallots, celery leaves, and scallions.
  9. Serve with lime wedges on the side.
