Ingredients:

  • 2 cups of rice flour
  • 1 and 1/2 cups of grated coconut
  • 1/2 cup of condensed milk
  • 1/2 cup of water
  • 1/2 teaspoon of salt

To make the Lempeng Kelapa, start by mixing the rice flour and grated coconut together in a mixing bowl. Next, add the condensed milk, water, and salt to the mixing bowl and stir the mixture until it turns into a smooth batter.

Using a non-stick pan, heat it up over low heat and add a tablespoon of the batter into the pan. Cook it for about a minute or until it turns golden brown on one side. Flip over and cook the other side until it also turns golden brown. Continue with the rest of the batter.

Instructions:

  • In a mixing bowl, mix together the rice flour and grated coconut.
  • Add the condensed milk, water, and salt to the mixing bowl and stir until the mixture turns into a smooth batter.
  • Heat up a non-stick pan over low heat and pour one tablespoon of the batter into the pan. Cook each side until it turns golden brown.
  • Continue with the rest of the batter and allow the Lempeng Kelapa to cool before serving.
