Ingredients:

  • 3-4 ikan tongkol steaks
  • 1 tablespoon of tamarind paste
  • 1 stalk of lemongrass (bruised)
  • 3 kefir lime leaves
  • 3 tablespoons of oil
  • 300ml of coconut milk
  • Salt (as needed)

Instructions:

First up, heat up your oil in a wok or large pan. Once it's hot, add in the bruised lemongrass and kefir lime leaves. Give it a quick stir to let the flavours infuse.

Next, add in your ikan tongkol steaks and cook them for about 1-2 minutes on each side. You want them to be lightly browned on the outside but still nice and juicy on the inside.

Now it's time to add in the coconut milk! Pour it into the pan and let it come to a gentle simmer.

Grab your tamarind paste and mix it with a bit of water in a small bowl. Once it's combined nicely, add it to the pan and give everything a good stir. This is where the magic happens! The tamarind paste gives the dish its signature tanginess.

Let everything cooks for about 10-15 minutes until the sauce thickens up a bit. You can season with salt to taste.

And voila! Your gulai kuning ikan tongkol is ready to be served. I like to have it with a side of fluffy white rice and some steamed veggies, but feel free to customize it to your own liking. Happy cooking!
