1. Heat the oil in a pan over medium heat. Add the lemongrass, shallots, garlic, galangal and red chilies. Fry until fragrant.

2. Add the shrimp paste to the pan and stir fry for another minute. Add half the water and cook for another 2-3 minutes.

3. Add the squid to the pan and stir well. Add palm sugar, fish sauce, and kaffir lime leaves. Mix everything together and cook for another 2-3 minutes.

4. Add the remaining water and let the dish simmer for another 5-6 minutes until the squid is cooked.

5. Serve hot, garnished with basil leaves.
