Ingredients:
- 1kg ikan tongkol
- 1 packet Kelantan gulai paste (you can find it at most Asian grocery stores)
- 2 cups coconut milk
- 1 thumb sized ginger, thinly sliced
- 2 stalks lemongrass, bruised
- 6 kaffir lime leaves
- Salt and sugar to taste
Instructions:
- Clean and cut the ikan tongkol into bite-sized pieces.
- Heat some oil in a frying pan and slightly fry the ikan tongkol until slightly brown. Remove from pan and set aside.
- In the same pan, add in the ginger and lemongrass and fry until fragrant.
- Add in the Kelantan gulai paste and saute until the oil starts to separate from the paste.
- Add in the coconut milk, kaffir lime leaves, salt and sugar. Stir well.
- Add in the ikan tongkol and let it simmer for about 15-20 minutes or until the fish is fully cooked.
- Season to taste and serve hot with steamed rice.
