Ingredients:
- 1 whole chicken, cleaned and cut into small pieces
- 500g of chicken rice
- 2 cloves of garlic, finely chopped
- 2 shallots, finely chopped
- 2-inch ginger, finely chopped
- 1 lemon grass, finely chopped
- 2 pandan leaves, tied in a knot
- 1 cube of chicken stock
- 5 cups of water
- 2 tbsp of cooking oil
- Salt to taste
Instructions:
- Wash the rice and set aside.
- Heat up the cooking oil in a pot and sauté the garlic, shallot, ginger and lemon grass until fragrant.
- Add in the chicken and stir until it changes color.
- Add in the knotted pandan leaves and chicken stock cube.
- Pour in the water and let it simmer until the chicken is cooked thoroughly.
- Remove the chicken and set aside.
- Add in the rice into the pot of chicken broth and cook on low heat until the rice is fully cooked.
- Fluff the rice and serve it on a plate with the chicken pieces on top.
- Enjoy!
