  • 1 whole chicken, cut into pieces
  • 1 teaspoon of turmeric powder
  • 1 teaspoon of salt
  • 3 tablespoons of oil
  • 8 dried chilies, soaked in hot water
  • 4 shallots
  • 4 cloves of garlic
  • 1 thumb-size piece of ginger
  • 1 thumb-size piece of galangal
  • 1 stalk of lemongrass, bruised
  • 2 teaspoons of tomato paste
  • 1 teaspoon of paprika
  • 1 teaspoon of coriander powder
  • 1 teaspoon of cumin powder
  • 1/2 teaspoon of fennel powder
  • 1 tablespoon of tamarind paste
  • 1 cup of water
  • 2 tablespoons of sugar

How to Make It:

Start by marinating your chicken pieces in turmeric powder and salt. Set them aside while you prepare the rest of your ingredients.

In a food processor or blender, blend together your soaked dried chilies, shallots, garlic, ginger, and galangal until you have a smooth paste.

Heat up the oil in a wok or large pot over medium heat, then add in your smooth paste and stir fry until fragrant, around 1-2 minutes.

Add in your bruised lemongrass, tomato paste, paprika, coriander powder, cumin powder, and fennel powder. Fry everything together until the oil separates from the paste.

Next, add in your marinated chicken and fry everything together until the chicken is browned on all sides.

Pour in your water, tamarind paste, and sugar, then let everything simmer until the chicken is fully cooked through and the sauce has thickened up, around 20-30 minutes.

And voila! Your Ayam Masak Merah is ready to be served. I recommend pairing it with some steamed rice and a side of vegetables. Trust me, your taste buds will thank you for this one!
