  • 2 cups of chicken broth
  • 1 inch ginger, sliced
  • 3 cloves garlic, chopped
  • 2 chicken thighs, bone-in and skin-on
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • Salt and pepper to taste

Instructions:

  1. In a large pot, toast the rice until fragrant. Add the chicken broth and bring to a boil.
  2. Add the ginger, garlic, salt, and pepper to the pot. Reduce heat to low and cover.
  3. In a separate pan, heat the soy sauce and sesame oil over medium heat. Add the chicken thighs and cook until golden brown on both sides.
  4. Add the chicken to the pot of rice, making sure it is covered. Cook for an additional 20-25 minutes or until the rice is cooked through.
  5. Remove the chicken from the pot and set aside. Fluff the rice with a fork and serve.
